How does a carb lover (like me) celebrate St. Patrick’s Day? By baking a loaf of Irish soda bread studded with raisins and turning it into French toast to gild the lily. You can make it a complete meal by serving it with fresh fruit and a mug of Irish coffee – and no one will miss the corned beef and cabbage. …
Sriracha Roasted Cauliflower
I love vegetables, especially when they’re tossed in olive oil, seasoned and baked at high heat. There’s something about the caramelized, crispy exterior and creamy interior that makes them irresistible. In the fall and winter, I’ll roast chunks of winter squash (acorn, butternut, kabocha) with smashed garlic cloves, salt and pepper. If I feel like it, I’ll thrown in some fresh or dried herbs. And in the spring and summer, I’ll do the same with whatever is in season: asparagus, eggplant, tomatoes, zucchini. Potatoes (sweet, red, gold, fingerling), carrots and onions get the treatment year-round….
Whole Wheat Cinnamon Coconut Cookie Granola
Move over cronut, donart and doughscuit. There’s a new hybrid treat in town. And I guarantee it’s no passing fad (at least in our household). Meet cranola – aka cookie granola – a Two of a Kind creation. It’s crispy and crunchy and extremely addictive. Healthy, it’s not – but when it comes to sweets, who’s really calorie-counting?…

(Yes, we have an entire section in the house devoted to my stash of gummies, chocolates and other sweet treats.) But after picking up a jar of coconut oil and some chia seeds for the first time, I’m starting to feel an eensy bit like a superfood freak….
Indian Spiced Chicken Stew
One should not live on bread alone. Otherwise, I’d subsist on carbs. But one can certainly plan a meal around bread – and in many cases, that’s what I do. Take for instance the dinner I made yesterday. I felt like making homemade naan, so started searching for a saucy Indian dish to pair with it. I was also in the mood for meat, which narrowed down the list. Eventually, I settled on this creamy, tomato-based chicken and potato stew….
Homemade Naan
Whenever my husband and I go out for Indian food, we always order one or two sides of naan. And if our entrées come with a choice of rice or naan, without hesitation, we always ask for naan. After all, what better vessel is there for sopping up all the delicious sauces and wiping our plates clean than fluffy, buttery naan? In our minds, rice just doesn’t do the job….
