I took Friday off and somehow the long weekend still flew by. I didn’t even do anything out of the ordinary – ran a few errands, did a load of laundry, baked, cooked, picked up a few things at the Burlingame Farmers’ Market and walked around the Burlingame on the Avenue festival while we were there. It was a relaxing yet somehow busy few days….
Mediterranean Quinoa Salad
Don’t tell Rookie, but I’ve been obsessed with corgis lately. It started when I noticed a corgi pup with its owner during my morning walk a few weeks ago. I could see the tiny barrel of brown and white fur rolling around in the grass from afar. So cute! And then I discovered the silliest – and smartest – corgi on YouTube….
Fava Bean Succotash

Bacon and Pea Quinoa Salad
Three-day weekends that start on Friday are the best. I love waking up on Saturday thinking it’s Sunday and then realizing I still have two full days to fiddle around in the kitchen. Case in point: I just whipped up a batch of homemade marshmallows even though we have far too manyplenty of sweets in the house, including leftover goodies from our Fourth of July family get-together….
Roasted Summer Vegetable Pasta
It’s officially summer. We’re already more than halfway through the year and my husband and I have yet to plan a vacation. Short of a few long weekends and holidays, we’ve been working nonstop since our honeymoon to France two Septembers ago. In fact, I’ve accumulated 352 hours (and counting) of paid time off. That’s 44 days!…
