It’s been more than six months since I’ve had a taste of cranola. I quit baking it cold turkey after realizing I put on a few pounds from eating too much of the sweet snack. But it was my friend’s birthday the other day, so I whipped up a batch to bring to her party….
December is shaping up to be an unexpectedly busy month. Typically, this is the time of year I get a jump on my to-do list at work and take a few days off to relax and recharge. Meetings, conference calls and deadlines prevented me from doing either. I can’t believe Christmas is two weeks away – I haven’t even thought about what to give family and friends….
What’s your favorite ice cream flavor? If I had to pick one, it would be a toss-up between chocolate chip cookie dough and cookies and cream (which is kind of ironic, since I don’t like cookie dough or cream-filled chocolate sandwich cookies). All this to say, I have no idea why it’s taken me so long to come up with this cranola creation….
It has been one busy workweek. We’re in the throes of our biggest project of the year and my to-do list is out of control. Deadlines are always looming and I’ve kissed my lunch breaks goodbye, opting instead to eat at my desk to squeeze another hour of productivity into the day. Thankfully, there’s light at the end of the tunnel and by mid-October I think I’ll be in a much better place….
I’m a sucker for snacks, especially those with a lot of crunch. Cranola, crackers and trail mix are some of my go-tos. But lately, I’ve taken to this sticky maple date granola, which is decidedly more chewy than crisp – and highly addictive.
