It’s been less than two weeks since my European vacation, yet I’m already eager for some more R & R. Projects piled up quickly while I was away and now I’m struggling to make progress on my massive to-do list. Needless to say, I’ve had little time or energy to meal plan, grocery shop and cook.
That’s where this honey-glazed salmon with broiled asparagus comes in. The recipe requires a short list of ingredients and about an hour to assemble, which means it’s a godsend for busy bees like me.
But don’t let the simplicity of the dish fool you. Honey-glazed salmon with broiled asparagus is flavorful and filling, especially when paired with crispy roasted potatoes with thyme or vegetable orzo pasta salad.

- 2 tablespoons unsalted butter
- 1 garlic clove, minced
- 1½ teaspoons honey
- juice of ½ lemon
- sea salt and freshly ground black pepper, to taste
- 2 skin-on salmon fillets (4-6 ounces each)

- 2 tablespoons all-purpose flour
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 pound asparagus
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- sea salt and freshly ground black pepper, to taste
- ½ lemon, zest and juice
- 2 tablespoons grated cheese
- In a small sauce pan, melt butter over medium heat. Continue to cook, swirling pan occasionally, until deep golden brown. Immediately pour butter into a small bowl and add garlic, honey and lemon juice; whisk until smooth. Season with salt and pepper to taste.
- Preheat oven to 400 degrees.
- Sprinkle both sides of fish with salt and pepper. Dredge fillets in flour and drizzle with honey.
- In a large fry pan, heat olive oil over high heat. Add fish, skin side down, and cook for 2 minutes. Flip and cook for another 2 minutes.
- Place fish, skin side down, on a baking sheet lined with foil. Bake for 8-10 minutes or until fish flakes easily with a fork.
- Drizzle brown butter sauce over fish.
- Preheat broiler. Place asparagus on a baking sheet and drizzle with olive oil. Season with garlic powder, salt and pepper; toss to coat.
- Broil for 5 minutes, stirring halfway through. Remove from the oven and top with lemon zest and juice, and cheese.
