I’ve never been too fond of cauliflower, but I’m developing a crush on this knobby white plant. It started when I made White on Rice Couple’s sriracha roasted cauliflower a few weeks ago and quickly blossomed after I made this unique and healthy twist on hummus. (My mom gifted me a whole head and so I had to figure out what to do with it.) I’m not a big hummus eater, but I could eat this dip by the spoonful. It’s light and nutty and not at all slimy like most bean dips.
Serve roasted cauliflower hummus with fresh vegetables or slather it on pita chips for a healthy snack or hors d’oeuvre. If you’re feeling ambitious, make the pita chips from scratch. The Kitchn offers helpful step-by-step instructions for preparing homemade pita bread. After following the recipe, lightly brush the rounds with olive oil and sprinkle with salt and sesame seeds. Then cut them into eighths and bake the wedges at 400 degrees until golden (about 10-12 minutes). You could do the same using store-bought pita bread or just buy a bag of chips. I’m a big fan of Trader Joe’s Reduced Guilt Pita Chips with Sea Salt, but any brand will do.

- 1 medium head cauliflower, cut into small florets
- 3 tablespoons olive oil, divided
- 1 garlic clove
- ¼ cup tahini
- 2 tablespoons freshly squeezed lemon juice
- salt and pepper, to taste
- olive oil, smoked paprika (optional, for garnish)
- Preheat oven to 400 degrees.
- Place cauliflower on a baking sheet. Drizzle with 1 tablespoon olive oil and toss to coat. Bake for 20 minutes, remove from the oven and stir. Bake for another 20 minutes. Remove from the oven and let cool.
- Combine the roasted cauliflower, 2 tablespoons olive oil, garlic, tahini, lemon juice, salt and pepper in a food processor. Process until smooth. Add water, one tablespoon at a time, for a thinner consistency, if desired.
- Scoop hummus into a bowl. Drizzle with additional olive oil and sprinkle with smoked paprika, if desired. Serve with fresh vegetables or pita chips.
